The Hiroshima prefecture Fisheries Experimental Station is developing
shaped one-piece shell-on oysters to meet the item's steady growth in
demand.
The prefecture is one of the country's major farming regions for the
shellfish, and a spokesperson for the prefectural office said a portion of
the farmed shell-on oysters were sold as gifts and were normally priced
higher by between 20 and 30 per cent than shucked items.
One of the drawbacks of the conventional farming method is that oysters
normally get clustered in a shell by the time they are shipped. But now
the station has been experimenting to create conditions in which oysters
can grow individually, for example, by attaching spats to a pebble inside
a shell.
The spokesperson concluded: "As soon as the method of producing shaped
one-piece oysters is found to be useful, we would like to improve
conditions for the smooth flow of spat production through shipment of
products to the market by farmers."
